The soup has a very rich taste thanks to the meat broth. At the same time, the juicy bell pepper gives it a sweetness that is diluted by the sourness of the tomato. The name comes from the Hungarian word “bogrács”, i.e. “cauldron”. The recipe of the dish was born many centuries ago in the field kitchen because nomadic tribes prepared this soup. Today, this is an incredibly popular dish in Transcarpathia – the western region of Ukraine, located near the Carpathian Mountains.
Bograch is ideal in combination with delicate potato slices or vareniki (Ukrainian dumplings).
